The easiest recipe... "in the world!"
I've spoken about "rice pullers" - well here's the easiest one to make. Just add sunshine and time!
This used to be a standard dish for every lunch we had, as kids. Today, it's considered a store-bought treat, even though its simple enough to make. Ladies and Gentlemen, I give you the Lime Pickle! A rice puller, par excellence!
A kilogram of fresh lime, a kilogram of rock salt, and two weeks sunshine starts it all off!
March 3rd. We figured that it wasn't going to get any dryer!
The 7th of March was when we put it all together.
Compacted, vinegar and fresh lime juice added
Pressed into two bottles, vinegar is added first, with a juice of a lime squeezed over the top.
Ready for another two week wait...
And that's it! Now all we have to do is wait...
There are, as in all recipes, many variations of this. For example, you could add snake-eye chilies into the bottles, or cardamons, cloves and cinnamon, or black pepper-seeds... any combination of which would subtly flavour the pickle, but the overall taste is going to be Lunu dhi, literally, salt and lime, which is what it's called locally!
Whilst this maybe the easiest recipe... in the world(!), I do realize that those in the less temperate areas of our planet might be bereft of sunshine so please, what would your workaround be? Feel free to comment down below!

No. Definitely NOT a snack, John. A Rice Puller is a small, savory dish that enhances the flavours off the entire plate. Lime Pickle is one. Fried dried fish is another. Sambols and chutneys all come under the rice puller umbrella too.
Followed the same recipe with lemons. I added a bit of sugar as well, as lemon skins, especially, are thicker and slightly bitter.
Will definitely try that, as we’re now growing our own lemons!
Can you use the salt? It should have lime taste 🤔.
Nah... we’re using the excess salt to manure the coconut trees in the garden! 😁
I didn't know that salt can be used as fertilizer. I thought high levels of sodium would kill a tree but it is coconut 🌴. Interesting 🤓
