The importance of double mozzarella on pizza

Let's start with an assumption: pizza is perfect. It is round like Giotto's circles. It is tasty and straightforward.

In its basic form, Margherita, has the colours of the Italian flag: tomato, mozzarella and a basil leaf. But it is also imaginative and, as far as the seasoning is concerned, there are no limits to the imagination.

Well, there is a limit: pineapple. There we go from perfection to abomination, but let's not digress.

There is a condiment that not everyone fully understands: double mozzarella.

Double mozzarella is a cuddle. A comfort food. Something that you allow yourself after a hard day, after a terrible day of work, if you argue with your boyfriend, or if you go down on the Foodtribe Leaderboard.

The double mozzarella is a soft covered with stringy cheese that you can bite, chew and taste.
