Meatless day 2(01/05/2021): I had some onions pickled in red wine vinegar that didn't get used, so I cut up some tomato, cucumbers and added a little seasoning and that was brunch along with a couple of mandarin oranges. For dinner I made a homemade tomato soup that was very nicely spiced along with a grilled cheese on multi-grain bread. It was pretty nice dinner especially with the chill outside. Overall not too bad. I hope you all have/had a great day!
