Everyone loves a chocolate chip cookie. This is a recipe for the best ones ever. The secret is brown butter which takes them to the next level, adding a subtle nutty flavor that blends perfectly with the molasses in brown sugar.

Ingredients

  • Butter - 1 1/4 cup
  • Granulated sugar - 3/4 cup
  • Firmly packed brown sugar - 1 cup
  • Eggs - 2 large
  • Vanilla - 1 tsp
  • Flour - 2 3/4 cup
  • Salt - 1/2 tsp
  • Baking soda - 2 tsp
  • Chopped dark chocolate or semisweet chocolate - 2 1/2 cup

Instructions

Brown butter

  1. Melt butter in a pot with a light colored bottom, so you can see the color of the butter.
  2. After your butter has melted, it'll become a little cloudy.
  3. Then it'll start to bubble and boil. Make sure you keep stirring it!
  4. Now it'll get less cloudy and start to get clear.
  5. It'll start to foam up again. At this point, it'll start turning brown very quickly.
  6. Keep stirring and once your butter has reached the desired color, remove from the heat.
  7. Immediately pour into a bowl and make sure you add even the brown bits at the bottom.

Cookie dough

  1. Add the sugars into the brown butter while it's hot, and mix until combined.
  2. Keep the mixture aside, till it cools down to room temperature.
  3. Add the eggs and vanilla to the brown butter mixture and whisk them together until the mixture is pale and fluffy.
  4. Add in flour, salt and baking soda. Mix them slowly until they're just barely combined. Over mixing the dough will make the cookies tough.
  5. Stir in the chocolate chips.

Freezing the dough (highly recommended)

  1. Put the dough in a container and leave it in the freezer for a day.
  2. After a day, defrost the dough. Take 1/4 cup of cookie dough, and shape them into round balls.
  3. Freeze them for 2 days.

Baking the cookies

  1. Preheat the oven to 190°C.
  2. Grease a baking sheet with butter, and dust it with flour.
  3. Place the cookie dough balls on the baking sheet and bake for 12-15 minutes, or until they turn golden brown.
  4. Take them out of the oven, and tap the baking sheet on the counter 3-4 times. This gives the cookies those wrinkles and cracks on the top.
  5. Cool on the baking sheet for 2-3 minutes before moving them onto a cooling rack. Or if you're like me, just start eating! 😂

Recipe Notes

I used salted butter, so if you use unsalted butter, add an extra 1/2 tsp of salt.
