The present Mrs. Stanley was busy working on her Masters degree last night so asked me if I’d rustle up a healthy dinner for the kids.
Now I’m no Gordon Ramsbottam, I don’t go around swearing and insulting people and I own the same number of exotic super cars as the average homeless person...
But! I am pretty proud of this meal! There are various options on offer each I’s shown in the photos.
Option 1: Oven cook 2 Richmond thins on the oven, the make a 1 egg omelette, then melt a strong cheddar into a Staffordshire oatcake. To assemble put the omelette on the oatcake and roll the sausages into the middle. Option 2 is my daughters preference. For that one, replace the 2 sausages for one frankfurter and prepare the same. The frankfurter version is particularly nice with ketchup and French mustard.
Sadly, there were only 2 Staffordshire oatcakes in, so I had to make do with just the omelette for the wrap. Still tasty, but not so cheesy or hearty. I did augment the fish by rolling frankfurter AND Richmond into the oatcake.
It’s a tasty, easy to prepare snack. If you get oatcakes where you live - give this one a go! 👍
