Tried and Tested: Soy, ginger and garlic roasted aubergine with rice noodles

We have been keen watchers of all different chefs, cooks and culinary masters all over lockdown and we have learnt so much in a short space of time. The most interesting thing is when big names start creating vegan dishes and amazingly over the last 2 years there is more and more recipes available for plant based. When we saw Chris Baber doing his soy, ginger and garlic roasted aubergine with rice noodles and veg we just had to try it.

I have to say its a very simple, quick and healthy meal to make which is just perfect for the mid week rush. It was so fresh tasting, light and ticked all the boxes for us. The aubergine with probably the best aubergine I've tasted to date. I am a little bit fussy when it comes to aubergines, especially when they are sloppy and soggy lol, but baking them is definitely the way forward. The sauce is just a classic flavour: ginger, soy and garlic are three ingredients that just own each other.
