Two super easy salsa recipes to use up the last of those summer veggies

Salsa verde

With the end of the summer, comes great quantities of tomatillos that need to be used quickly! I think tomatillos were invented to become salsa verde. Salsa verde is probably the easiest thing to make that tastes amazing and can impress your guests.

A spicy and fresh green salsa

Ingredients

  • 1 medium yellow onion
  • 12 tomatillos
  • Fresh Coriander (To taste)
  • 4 jalapeños
  • Salt & Pepper (To taste)
  • 2 tbsp lime juice
  • 2 cloves of garlic or 3 stems of garlic scapes

Instructions

  1. Prepare yourself, this is a complicated recipe. Have a drink and mentally prepare for the task ahead.
  2. Roughly cut up the tomatillos and the onion.
  3. Remove the seeds from the jalapeños and keep them aside. Roughly chop the rest.
  4. Put the lime juice, tomatillos, onion, garlic and jalapeños in a blender and blend until an even purée is achieved.
  5. Taste your purée. Add your desired quantity of coriander, salt and pepper. If it is not spicy enough, add a few seeds of the jalapeno.
  6. Pulse the blender to mix in the seasoning.
  7. Enjoy with tortilla chips or on tacos, or drink it as a very spicy smoothie if that's your thing.

Peach Salsa

If spicy is not your thing, you can make this peach salsa to enjoy on tacos or with tortillas. This also goes well in a salad.

Peach Salsa

A sweet and tangy salsa

Ingredients

  • 1 large tomato
  • 1 shallot
  • 1 peach
  • Fresh coriander (to taste)
  • 1 tbsp lemon juice
  • Salt and Pepper
  • A splash of tabasco sauce (optional)

Instructions

  1. Dice the onion, peach and tomato and add to a bowl.
  2. Finely chop the coriander and add to the bowl along with a pinch of salt, a generous peppering and a drop of tabasco sauce if you like it spicy.
  3. Mix so that everybody gets to know each other and refrigerate for 2h.
  4. Enjoy!
