The Banh Mi fits all the flavor profiles I enjoy in Asian food, so why not do a ramen take on it?
Let's start with pickling the veggies. In a bowl I add around 1/2 cup shredded carrot, two radishes cut into match sticks, one sliced jalapeno, two tablespoons rice wine vinegar, a little sugar and a sprinkling of salt. Stir well and set aside.
Next let's get the sauce ready. In a bowl I add two tablespoons hoisin sauce, two tablespoons fish sauce, one tablespoon sugar and a clove of minced garlic. I season my ground pork with one tablespoon hoisin and one tablespoon fish sauce.
Now we are ready to get cooking. Heat your wok or skillet up, add some oil, toss in the ground pork and break it up. When your pork is most of the way cooked, toss in your barely cooked ramen. Fry and loosen up your ramen. Now add the sauce in and get this well mixed.
Time to plate up and garnish. Once you have your pork and ramen on the plate, scoop out your pickled veggies and place on top, optional garnish with some cilantro.
Let's eat..
The pork and noodles give you a bit of sweet and salty, while the pickled veg gives a bright pop of flavor with a bit of heat and sour. Overall this was excellent and I highly recommend it.
