If you like Chinese food, I'm sure you like lo mein. This recipe is easy enough to tweak to what you have on hand. I highly recommend you giving this one a go.
There are just a few must have ingredients: pack of ramen, soy sauce, oyster sauce, sugar, and everything else is up to you.
Start with throwing out the flavor pack and go get a small bowl to have your sauce ready to go. For my sauce I use two tablespoons oyster sauce, one tablespoon soy sauce and one teaspoon sugar (I used cane sugar but any will do). Stir it well, sit it to the side and let's get started.
The meat I had on hand was ground pork and I seasoned it with some soy sauce, then I tossed it into my preheated oil and broke it up with my spatula. Once the pork is cooked 1/2-3/4 of the way, I add my choice of vegetables. Once my pork is fully cooked, I add ramen (barely cooked), and let it fry until it starts to get a slight char.
In goes a clove of minced garlic and my sauce, get this all mixed and blended well. Take off the heat, plate up and eat!

Looks very tasty. Maybe a stupid question, but I assume you use a non-stick pan? My track record of frying noodles isn't great - they usually end up sticking badly to the pan.
This one i actually used my wok but nonstick should work and I have used cast iron as well. Just make sure enough oil.
