Uncommon Ramen: Pad Thai style ramen recipe

Another day, another Uncommon Ramen. This covered enough flavor points that I enjoy about Pad Thai, so I'm going to share it with you all.

Let's start with the sauce, because you want to have that ready to go. Start with chucking that flavor packet into the bin and grabbing a small bowl. Add 2 1/2tbsp fish sauce, 2tbsp sugar, juice from half of a lime, 1/4tsp chilli powder, 1/2tsp dried minced garlic, and if you are wanting some heat, add in some dried crushed pepper as well.

I used ground beef for the meat, it is what was in the fridge. I tossed a handful into the cast iron skillet and added a little of my sauce mix to season it. When it was around halfway cooked, I added my choice of vegetables, which were bamboo, onion and some sliced up Serrano peppers.

Once my beef was cooked, I shoved that and the veggies to one side, then added in my barely cooked ramen. I was looking to get a bit of a sear and flip it over to get the other side. Next I crack a couple of eggs over my meat and veggie side.

Start getting this all mixed together and then add the rest of the sauce in. Make sure everything is well mixed and the egg is cooked. Plate it up, sprinkle some green onion and additional crushed pepper on top. Let's eat!

Since COVID hit, I have been having trouble getting rice noodles locally and the flavors of this satisfied me. I did use additional lime and crushed pepper, but when it comes down to it, this was mighty tasty. A bit of salt from the fish sauce, pop of lime and a hint of sweetness, with a bit of spicy from the crushed pepper. I hope you decide to give this a try.
