Eating my way through the states - Indiana
I have decided to take a trip to all 50 states, without ever leaving my kitchen. Each week, I will cook a dish that is popular in each state. Whether it's the signature dish, or simply a meal craved by the locals, I am cooking up all the favorites.
This week we are heading next door from Ohio and going where I was born, Indiana. Indiana's famous dish is the fried pork tenderloin sandwich, also known as the Hoosier Tenderloin. Now apparently the rule is the pork should hang over the bun by about 2 inches all around. I did not get even close to that big for a couple reasons. One being that even with how much hang I had on my sandwich it was still a pain to pick it up and eat it, and second, if I spent anymore time pounding down the cutlet I thought for sure my neighbors would file a noise complaint.
The sandwich is served with an array of toppings, but it all comes down to personal preference. I went with simple lettuce and chipotle mayo, but you can also opt for pickles, ketchup, mustard or regular mayo.
Well, there you have it. Indiana's most popular dish! Definitely filling, and definitely delicious.
