Warm Chickpea & Chorizo Salad

I'm trying to restrict my shopping trips as much as possible to give the shops time to stock up so I keep experimenting and like this one.

This salad is an an adaptation of one that I use often from a really old Peter Gordon cookbook.

I think he was one of the first chefs that really made the trend in fusion food happen in a sensible way many years ago.

Taking the food of one country and using the techniques of another and fusing them together for delicious effect. It's hard create truly new recipes but I think he is a genius at it.

Warm Chickpea & Chorizo Salad

This warm salad is made creamy at the end by the addition of feta


  • ½ onion finely chopped
  • 1 garlic glove finely chopped
  • 400g tin chickpeas
  • 100g chorizo chopped in small pieces
  • 100g feta cheese
  • 1 stalk celery finely sliced
  • a pinch of chilli flakes
  • 1 tablespoon olive oil
  • 2 tablespoons white wine vinegar
  • chopped basil


  1. Heat the oil and fry the onion garlic and celery until lightly golden.
  2. Fry the chorizo until cooked then add the chickpeas and warm through. Add in a pinch of chilli flakes.
  3. Add the vinegar stir well and let it sizzle for about 30 seconds.
  4. Remove from the heat and stir in the crumbled feta but not too much as you want some chunks to remain.
  5. Top with the basil and serve warm.

Recipe Notes

In the photo I served it with lightly steamed swiss chart and spinach.
