Watch: Cook up this sweet Brazilian treat, Brigadeiros
As Formula Food heads to the bustling city of São Paulo, we prep some fudge balls.
This is easily the most unhealthy recipe I've ever done for this series. But dear lord I do love me some fudge balls. Anyhow, here's how to make them.
Brazilian chocolate fudge balls

Ingredients
- 1x 405g tin of Condensed Milk
- 1/2 cup of Nesquik powder or indeed any choccy milk powder.
- 1 tablespoon of butter and a little more for your hands.
- Loads of chocolate sprinkles. Like, more than you think you'll need.
Instructions
Making the Fudge
- Empty the condensed milk into a pan, make sure you get it all in. Add in the butter and the Nesquick powder. Stir well over low heat. You're looking to combine this all for about 10 minutes. Eventually, it'll start to thicken and take a second or two to cover a scraped area. Crucially don't let it burn to the bottom of the pan.
- If you have a sugar thermometer, you're looking for around 97°C.
- Empty the hot fudge into a bowl/dish and leave to cool. This can take a good while.
Shaping the Balls
- Fill a small bowl with the sprinkles.
- Get a cloth nearby because you'll need it.
- Butter your hands.
- Pinch off some of the fudge and roll in your hands to form a small ball. Roughly a half or whole teaspoon. Not a huge amount.
- Pop into the sprinkles and coat fully.
- Place the coated ball onto a plate.
- Repeat until the fudge is gone.

Try not to eat all the fudge before you've made the balls.

Do you need to make sure it gets up to that temp? I might I have to make these just because.
I don’t have a candy thermometer so just used a bit of guess work and kept stirring until it took a moment to cover the bottom of the pan again. I think there’s a shot of how thick it ought to be in the video. The temperature is more of a guide to stop...
