Negi Meshi (Fried rice with green onion) is very simple, cheap and delicious fried rice. All you need is rice, green onion, garlic, soy sauce, and butter (and salt and pepper). I have been making Negi Meshi since I was a high school student (and I am 48 now).
The recipe is super simple, but there are some secrets to make good fried rice.
1. Use cold rice. Cold rice is easier to handle when you stir fry.
2. Once you place rice in the frying pan, cook over hight heat.
3. Try to separate each grain of rice so you don't end up with clumps.
