Koyadofu is frozen dried tofu. It has been used in Buddhist monk cooking (shojin ryouri 精進料理). It is packed with nutrition (more nutritious than regular tofu) such as plant protein, iron and calcium. It is very versatile. You can use it as a substitute for carbohydrates and meat. You can make dessert with Koyadofu too.
