Time to reorganize the pantry

At the beginning of quarantine in late March, I went through our cupboard of canned goods and shockingly had to throw out more than I thought I'd have to. The reality for most people is that we can be careless and things get pushed to the back of cupboards and pantries. We tend to grab the things we see first, and the stuff at the back gets forgotten about. One thing this period of limited grocery store trips and unemployment has taught me is to take the extra moment to look through what I already have, so I can stop wasting.

It's now three months into this new world, and in the midst of a new oncoming surge in coronavirus cases here in the U.S., I'm moving later this summer. I must move to look after an elderly relative, so my unemployment situation happened at a "perfect" time. The same goes for organizing my belongings and donating things I don't need, as moving is the ideal time to do this. So, I found myself back in the pantry.

Yesterday, my mom was in the mood for a chocolate sweet, and I went on a search to find something. I remembered we had this box of ingredients for chocolate fudge, and luckily it was still good!

These "Famous Fudge" kits by Carnation are available during the Christmas season. Yes, it's been sitting around my pantry since then but hey, it's not expired. These kits include almost everything you need to make a batch of creamy fudge, just not the 2 Tbs. of butter and a square pan. It has the chocolate (in the form of chocolate chips), marshmallows, Carnation evaporated milk, and a sugar mix.

The instructions strangely say to line the pan with aluminum foil, then coat the foil in a nonstick substance, but parchment paper will make your life easier. All you do is bring the butter, sugar mix, and evaporated milk to a boil and stir continuously for four minutes. For whatever reason, when it starts to boil it smells like macaroni and cheese. Take it off the heat, and mix in the chocolate and marshmallows until it's all nicely melted together. Spread in the pan, let hardened, and you have delicious fudge that the whole family can enjoy!

  • Well, way back behind the spare coffeemaker I found a very small cast iron skillet packaged with what looks like a packet of dry brownie mix. I now recall receiving it one Christmas from my son's second wife. As he's had more wives since then, by now it's likely, oh, say, eleven years old. If it was a re-gift, who knows how old it is. I'll just keep the skillet. Pantry is now lighter by one packet of brown stuff.
