There definitely certain wines that need food. For example Reserve Barolo and Brunello. But then you have lovely delicate Pinot Noir and Champagne that don’t really need any accompaniment.

I sometimes like try a bad pairing to see how they clash. Spicy food with oaky, tannic Cab Sauv is awful.
