Tofu, AKA soybean curd, might seem like a relatively new addition to our fridges and recipes, especially to the stubborn carnivores who, let's be honest, probably don't see the point in this meat substitute. But Tofu has, in fact, been around for over 2,000 years. That's right it was first developed in China around 200 BC!

I​t's come a long way since Buddhist monks ate it as part of their strict vegetarian diets way back when. These days some use Tofu in desserts. Vegan cheesecake anyone? Typically, there are three types of tofu: silken, soft, and firm. The extra-firm tofu is most like meat, soft is pretty versatile, while the silken tofu is smooth and creamy, almost like custard, and can be used as to thicken and add protein to morning smoothies.

I​n this case, we are sharing a recipe for a delicious breaded Tofu stir-fry that's stress-free and super quick. Ingredients

  • 250g of egg noodles
  • 1.5 ActiFry spoonfuls of sesame oil
  • 3 ActiFry spoonfuls of soy sauce
  • 150g of button mushrooms
  • 150g of beansprouts
  • 3​ carrots
  • 1​ chopped onion
  • 3​ eggs
  • 1​30g of sifted flour
  • 1​30g dried breadcrumbs
  • 1.5 ActiFry spoonfuls of cumin or caraway seeds
  • 500g of fresh tofu
  • 1.5 ActiFry spoons of olive oil
  • S​alt, pepper
  • *Beansprouts, to serve

Instructions

  1. Cook the noodles according to the instructions on the packet. Drain them, roughly chop and spread them in the bottom of the cooking pan. Drizzle with sesame oil and soy sauce. Add the mushrooms on the handle side, then the beansprouts on top. Add the carrots and onion. Close the lid without adding the tray.
  2. Configure your ActiFry to the specified time and begin the first stage of cooking.
  3. In the meantime, beat the eggs in a bowl with a little salt and pepper. Put the flour in a separate bowl and the breadcrumbs in a third bowl. Finely chop the caraway seeds and add them to the breadcrumbs.
  4. Cut the block of tofu in half horizontally, then chop into 3x3 cm cubes. Cover each tofu cube in flour, then in beaten egg, then in breadcrumbs. Place them on the tray as you finish them. Lightly oil.
  5. When the timer sounds, add the tray of tofu and begin the second stage of cooking.
  6. Serve the tofu with the stir-fried noodles, not forgetting the soy sauce.
